not everytime is better to have MANY cores not every sw CAN be programmed to use all cores  for full eficiency

the you prefered is good for server stuff = many  VM  stuff, and Rendering  but not for overall stuff

you need Workstation CPU to get max out of it...

Already many times discussed here, more cores SLOWER PC recon times...

i7 can adress only 64 GB ram, for 64+ GB ram need a XEON CPU 
using RAM disk is useles, better buy a SSD as RAM is more important

Looking on the data,  you have 2 height levels, need a bit more say 3-4, so get the whole  building covered from "any"angle....

easy solution  take the PDF to the print shop and they can print in "any" size. as when printing can set it to desired size....
