ECC are way overpriced and you won't get faster multithreaded processing but just only more processing bandwidth. Those are internet server configurations not that suited for discrete computing and your bottleneck won't be in random access memory but in raw processing power. Besides, meltdown and spectre patches are driving branch prediction performance down in Intel solutions. Just this week new spectre vulnerabilities have been announced and more are expected in the coming months. Ideally for discrete computing you would need as many cores as possible, it is more important than RAM because you can always chunk down your scenes.
AMD is offering right now more advanced and cheaper solutions than Intel.
