General / DEM elevation for underwater photogrammetry

Hi everyone,
I am not very new to Metashape, however, I am struggling with some functionalities I have not used much before.
I created two 3D models of an area under water, which constitutes wreckage of a small ship surrounded by a sandy sea floor. No control points, no absolute XYZ coordinates. The models come out perfectly. I then create orthomosaics, also great result.
Now I build the DEMs, also works great. However, I want to add elevation to the DEMs manually. I've played around with markers and GCPs but I can't seem to get this to work. Can someone explain to me step by step how to go about this?
The reason I'm doing this is because I want compare the two DEMs and see how the sea floor has changed over time. For this I obviously need to enter the elevation (depth) of a fixed point on the wreckage in both models.
