General / Underlying profile data

I'm curious if there is anyway to access the underlying data from the profile plots on a DEM.  I know that you can export the line as a .shp etc, and get a report, but neither of these has x,y, and z values.

We are trying to calculate vegetation height along a series of randomly selected transects.  Therefore, I would like access to the data, preferably in a tabular form so that I can determine the number of plants and average heights.
