I'd guess that using the highest possible quality setting, where every pixel is used, would require very high image quality for truly making a difference in the pointcloud detail level.
Most digital cameras use AA filters for counteracting moire, which means that the image is slightly blurred on purpose. There are some cameras without AA filter and the achievable sharpness does increase quite a bit.
Furthermore digital cameras use, with exception of Foveon sensors, a Bayer pattern for capturing color information. Every pixel on the sensor has either a red, a green or a blue filter infront. So a pixel, which actually just captured the blue part of the light, will be interpolated to achieve the final color result. Through this interpolation some image sharpness is lost. Leica, for example, offers a monochrome camera, where no color can be recorded. Comparision show a fairly signifcant increase in sharpness.
Of course additional factors contribute to the final image quality, which is the deciding factor wether it is worth processing on Ultra high. No motion blur (sturdy tripod + mirror up), diffraction, the quality of the lens used etc. etc. all influence this.
