General / Build DEM using lowest points (bottom of grass/vegetation)

I would like to build a DEM that primarily uses the lowest LiDAR points scanned of a grassy terrain, to get as close to the ground surface as possible. I am using the Planar Bottom XY projection, can anyone confirm if this would be the best approach? Use examples of the different planar projection methods would be helpful.
