Interesting idea. I have used an arduino-triggered flash to shoot images of a bursting balloon. As it is the flash and not the camera that was triggered (everything happening in a dark room with the camera shutter open for 30 seconds), it would easily be possible to use multiple cameras and then load the images into PhotoScan. Let us see your results when you get them!
