Omega, Phi, Kappa Unexpected Variability?

Metashape newbie here, I'm having trouble with my omega, phi, kappa camera location export.
As my photo setup consists of a 360 degree turntable - I'm expecting at least omega and phi to remain fully constant.

I've attempted to move my coordinate system centre using some Python scripts (forums) however this still provides very variable omega, phi and kappa numbers (photo attached).

What might be causing these variable numbers and how might I fix this?
Thank you in advance for any help.

N.B. The scene uses an arbitrary (default?) coordinate system / no real world location per se.
