Choose texture size
Choose texture count

I am using the standard version so forgive me if this is a feature that is included in Pro.

texture size can be set in increment like 2048c2048, 4096x4096 up to 16536x16536 pixels. You can export - generate for every photo a new texture - in Genarate texture menu.....

I don't have this option to export a new texture for each photo. I only have the option to export a single texture. I do see that there is an option under the "Build Texture" menu for Mapping Mode= "Single camera".  Is that what you are referring to? I will try that method but that would mean I need to do a lot of work as I am dealing with thousands of photos.  :'(  Preferred method would be to input the amount of texture atlases to be created and at what resolution. Enjoying this software so far. Kudos to the developers.
